Although I must confess that I haven’t experienced real Mexican street corn in Mexico, we do adore it in border towns like San Diego. All of the components for our Elotes corn dip are quite common, except the Cotija cheese. Cotija cheese should be available in most supermarket stores.

  • Cream cheese: full-fat cream cheese is used here, however, lower-fat cream cheese is also an option.

  • Colby, mozzarella, pepper jack, or Monterey Jack cheeses can be used for cheddar cheese.

  • Sliced fresh cilantro is used as a garnish. Green onions also work well as a garnish.


Use fresh corn: Although we prefer to start the dish using frozen corn to speed things up even more, cooking fresh corn and removing it from the cob is also a fantastic option if you have more time.

How to Make Mexican Cream Cheese Corn Dip

  1. Mix the cream cheese, Greek yogurt, lime, cumin, garlic, paprika, and cayenne in a large mixing basin or bowl of a stand mixer. Blend until thoroughly blended.
  2. Put the butter, chopped shallot, lime and either canned or frozen corn in a skillet over medium heat. Cook, stirring, until the butter melts and the veggies become tender.
  3. Mix thoroughly after adding the shredded cheese, cotija cheese, and cream cheese mixture.
