  • 2 onions, chopped
  • 1 lb mushroom, sliced
  • 1 tablespoon paprika
  • 1 1⁄2 teaspoons dill
  • 1 teaspoon caraway seed (optional)
  • 1⁄8 teaspoon black pepper
  • 3 tablespoons low sodium soy sauce
  • 4 fluid ounces water or 4 fluid ounces vegetable stock
  • 1 tablespoon olive oil
  • 2 tablespoons unbleached flour
  • 16 fluid ounces soymilk or 16 fluid ounces rice milk
  • 2 tablespoons lemon juice
  • 3 tablespoons red wine (optional)


  • Add the onions to a large pot with ½ cup water or vegetable stock to heat and soften/brown them.
  • Simmer on high heat for about 5 minutes, or until the onions are tender and the liquid has completely evaporated, stirring often.
  • Cook the onions for a further three minutes, or until most of the liquid has gone and the onions start to brown, after adding another ¼ cup of water or vegetable stock and stirring to dislodge any chunks that have adhered to the pan.
  • Add the seasonings and cut mushrooms.
  • Reduce the heat a little, cover, and cook for five minutes while stirring regularly.
  • Add the stock and soy sauce.
  • Ten minutes of simmering under cover.
  • To make a thick paste, combine the flour and olive oil in a different pan.
  • Cook for one minute while stirring continuously. Then, whisk in the soy or rice milk and cook, stirring often, over medium heat until steaming and slightly thickened.
  • Pour the soup with the milk mixture.
  • Just before serving, whisk in the red wine and lemon juice.

There’s plenty of opportunity for experimenting here, following in the tradition of simple mushroom recipes. For a vegetarian dish, use rice milk, olive oil, and vegetable stock. Alternatively, use as much beef stock as you desire.


  • 1 lb mushrooms, chopped in medium-sized pieces
  • 2 tablespoons butter or olive oil
  • 2 cups stock (beef, vegetable, or whatever)
  • 2 cups milk
  • 1/4 cup white wine
  • 1 medium yellow onion, chopped
  • 2 tablespoons lemon juice
  • 2 tablespoons soy sauce
  • 2 tablespoons flour
  • 1 tablespoon paprika
  • salt and pepper to taste

After wiping the mushrooms down with a moist towel, cut them into medium-sized chunks.

In a soup pot set over medium heat, melt the butter. Add the onions and simmer for about 5 minutes, or until they are tender.

Add the white wine, paprika, and mushrooms. Stirring constantly, let the mixture cook for an additional five minutes.

Stir in the soy sauce and stock next. For ten minutes, cook everything in the pot with a lid on. Lift the cover and give it an occasional check to make sure it hasn’t boiled. If the water is boiling, reduce the heat a little.

In a separate small skillet, mix together the flour and milk while the soup is cooking. It is going to be used to make this soup thicker with mushrooms.

Simmer for ten minutes, then gradually stir in the flour/milk mixture. Stirring constantly, let everything cook together for about a minute.

After turning off the heat, whisk in the lemon juice. To taste, add salt and pepper, then serve. Delicious!

Tomatoes are an ingredient in classic Campbell’s golden mushroom soup. When mixing in the stock, feel free to add a can of crushed tomatoes and a tablespoon of tomato paste.
Dill is also used in several recipes for mushroom soup. Since I’m not a big lover of dill, I left it out, but feel free to add a teaspoon along with the mushrooms if you are.
You can use either white wine or sherry in this recipe; some people just like the taste of sherry better.

  • Two pounds of ground beef
  • To taste, add salt and pepper.
  • (For dredging) flour
  • Golden Mushroom Soup in two cans

Container: 9 x 13 baking pan


  • Set oven temperature to 350°F.
  • Depending on the amount of fat in the meat, flatten 8 to 10 flat patties out of ground beef.
  • In a big frying pan, heat the oil.
  • Burgers should be seasoned to taste. Lightly coat with flour.
