Garlic butter chicken is a quick skillet dinner, but its texture depends on pan management. Dry chicken, enough space between the pieces, and a hot pan create browning. Garlic and butter enter later so neither burns while the chicken sears.

Choose and Cut the Chicken

Chicken thighs stay especially juicy, while breast meat has a leaner finish. Whichever you use, cut the pieces to a similar 1-inch size and blot them dry before seasoning. Uneven pieces finish at different times and make it harder to keep the smallest ones tender.

Sear First, Sauce Second

Preheat the skillet, add oil and a small amount of butter, then arrange the chicken in one layer. Work in two batches if the pan is crowded. Let the first side develop color before stirring. Lower the heat before adding garlic; 30 seconds is usually enough to release its aroma without making it bitter.

Broth loosens the browned bits on the bottom of the pan. Lemon provides contrast to the butter, while the final simmer coats the chicken without turning the sauce greasy. If the sauce separates, take the pan off the heat and swirl in a teaspoon of cool broth.

Doneness and Serving

Check a thick piece with an instant-read thermometer. Poultry should reach 165°F (74°C), according to the USDA’s safe minimum internal temperature chart. Serve with rice, potatoes, pasta, or a crisp Mediterranean chickpea salad. You can also browse more chicken recipes.

Common Fixes

  • Pale chicken: dry the surface and avoid crowding the skillet.
  • Burnt garlic: lower the heat before adding it and keep it moving.
  • Thin sauce: simmer briefly after adding broth, but remove the chicken first if it is already done.
  • Overly rich flavor: add a small squeeze of lemon and taste again before adding salt.

Prep Time: 15 minutes
Cook Time: 18 minutes
Total Time: 33 minutes
Servings: 4

Ingredients

  • 1 1/2 pounds boneless skinless chicken breasts or thighs, cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon fine salt
  • 1/4 teaspoon black pepper
  • 4 tablespoons unsalted butter, divided
  • 5 garlic cloves, minced
  • 1/3 cup chicken broth
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Italian seasoning
  • 2 tablespoons chopped parsley

Instructions

  1. Blot chicken dry, then toss with paprika, garlic powder, onion powder, salt, and pepper.
  2. Heat oil and 1 tablespoon butter in a large skillet over medium-high heat. Add chicken in one uncrowded layer.
  3. Cook 4 to 5 minutes, turning as needed, until golden and nearly cooked through. Work in batches if necessary.
  4. Reduce heat. Add garlic and stir about 30 seconds, just until fragrant.
  5. Add remaining butter, broth, lemon juice, and Italian seasoning. Simmer 2 to 3 minutes, scraping up the browned bits.
  6. Cook until the thickest chicken pieces reach 165°F (74°C) and the sauce lightly coats them.
  7. Remove from heat, stir in parsley, and serve promptly.

Notes

Do not crowd the pan; trapped steam prevents browning. Refrigerate leftovers promptly.
