Fluffy pancakes rely more on mixing and heat control than on a long ingredient list. Baking powder creates lift, but the batter still needs a light hand: vigorous stirring develops gluten and squeezes out the air that makes the crumb tender.
Mix Until Just Combined
Whisk the dry ingredients thoroughly before adding liquid so the baking powder is evenly distributed. Combine the wet ingredients separately, then fold the two mixtures together only until no large pockets of dry flour remain. Small lumps are normal and preferable to a perfectly smooth, overworked batter.

Find the Right Pan Temperature
Medium heat is a starting point, not a fixed rule. Test with a small spoonful of batter: it should sizzle gently and turn golden rather than dark brown before bubbles appear on top. If the first pancake scorches outside while staying wet inside, lower the heat and let the pan settle for a minute.
Flip once the surface shows bubbles that begin to stay open and the edge loses its wet shine. Slide the spatula fully underneath and turn in one motion. Pressing down after the flip forces out steam and makes the pancake flatter.
Adjusting the Batter
- Too thick to spread: fold in milk one tablespoon at a time.
- Very thin: add one tablespoon of flour and rest the batter for two minutes.
- Dense pancakes: check that the baking powder is fresh and avoid overmixing.
- Uneven color: wipe away dark butter solids and add only a thin film of fresh butter.

Keeping a Batch Warm
Place finished pancakes in a single layer on a wire rack set over a sheet pan in a 200°F (95°C) oven. The rack prevents condensation from making the bottoms soggy. Avoid stacking until serving. Refrigerate leftovers promptly and reheat in a toaster or dry skillet for a better surface than the microwave.
Fluffy Homemade Pancakes
Thick, tender pancakes with golden edges, made from simple pantry ingredients.
Prep Time: 10 minutes
Cook Time: 15 minutes
Batter Rest: 5 minutes
Total Time: 30 minutes
Servings: 4
Ingredients
- 1 1/2 cups all-purpose flour
- 3 tablespoons granulated sugar
- 1 tablespoon baking powder
- 1/4 teaspoon fine salt
- 1 1/4 cups milk
- 1 large egg
- 3 tablespoons melted butter, plus more for the pan

- Maple syrup and fresh berries, for serving
Instructions
- Whisk flour, sugar, baking powder, and salt in a large bowl.
- In a separate bowl, whisk milk, egg, melted butter, and vanilla.
- Pour wet ingredients into dry. Fold just until no large dry patches remain; small lumps are fine.
- Rest the batter for 5 minutes while heating a lightly buttered skillet over medium heat.
- Scoop about 1/4 cup batter per pancake. Cook until bubbles stay open on the surface and the edges look set.
- Flip once and cook 1 to 2 minutes more, until golden and cooked through. Do not press down.
- Serve warm with syrup and berries.
Notes
If the pancakes brown before bubbles form, reduce the heat. The first pancake is a useful temperature test.
