  • 2 large stalks celery, sliced 1/4 inch thick
  • 2 large carrots, peeled and cut into rounds or half rounds, depending on size

  1. In a large soup kettle, bring the broth & water to a simmer on medium-high heat. In the meantime, remove the chicken’s skin and bones and set aside the meat. Simmer the soup with the skin and bones added. Lower the heat to a low level, cover slightly, and simmer for 20 to 30 minutes, or until the bones release their flavour.
  2. Pour the soup into a big vessel using a sieve; set aside the broth and throw away the skin and bones. Put the kettle back on the medium-high flame.
  3. Add the oil, then the celery, onions, and carrots. Saute for 8 to 10 minutes, or until soft. Stir in, thyme, and broth. Heat through to a simmer. (It can be chilled up to three days ahead of time. Before adding the desired additions, bring the mixture back to a simmer.)
