Chicken rice bowls are most useful when the components are designed to work together: seasoned chicken, rice that stays separate and fluffy, crisp vegetables, and a tangy garlic-herb sauce. Cooking and storing each component separately preserves those textures and makes the bowls practical for meal prep.

Start with Rice That Is Not Wet or Gummy

Rinse long-grain rice until the water is much less cloudy, then drain it well before adding the measured liquid. Once the pan is covered and the heat is reduced, avoid lifting the lid. The five-minute rest after cooking lets moisture distribute through the grains; fluff with a fork rather than stirring vigorously.

Brown the Chicken Without Drying It Out

Cut the chicken into similar pieces and dry the surface before adding oil and seasoning. Preheat a wide skillet, arrange the pieces in one layer, and leave them alone long enough to brown before turning. If the pan is crowded, cook in two batches; moisture released by overlapping chicken creates steam instead of color.

Breast meat cooks quickly and should come off the heat as soon as it reaches a safe temperature. Thigh meat is more forgiving and has a richer flavor. Either works, but combining pieces of different sizes makes doneness harder to judge.

Make the Sauce Fit the Bowl

Greek yogurt supplies body and tang, mayonnaise makes the sauce smoother, and lemon keeps it fresh. Grate the garlic finely so no one bite tastes harsh. Add water one tablespoon at a time until the sauce drizzles from a spoon but does not run to the bottom of the bowl.

Meal-Prep Assembly

  • Cool rice and chicken before closing storage containers.
  • Keep cucumber, tomato, avocado, and sauce away from the components that will be reheated.
  • Add avocado on the day you plan to eat the bowl.
  • Reheat chicken and rice until steaming hot, then add the cold vegetables and sauce.
  • For a dairy-free bowl, use a suitable unsweetened yogurt and omit mayonnaise only if the replacement sauce has enough body.

Chicken Rice Bowls with Garlic Herb Sauce

Fresh and filling rice bowls with juicy seasoned chicken, fluffy rice, crisp vegetables, avocado, and creamy garlic herb sauce.

Prep Time: 20 minutes
Cook Time: 20 minutes
Total Time: 45 minutes
Servings: 4 servings

Ingredients

  • 1 1/2 pounds boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 2 tablespoons olive oil, divided
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon fine salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 cup long-grain white rice, rinsed
  • 2 cups water or low-sodium chicken broth
  • 1 cup cherry tomatoes, halved
  • 1 English cucumber, diced
  • 1 cup shredded carrots
  • 1 avocado, sliced
  • 1/4 cup thinly sliced red onion
  • 2 tablespoons chopped fresh parsley
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon fresh lemon juice
  • 1 small garlic clove, finely grated
  • 1 tablespoon chopped fresh parsley or dill
  • 1/4 teaspoon fine salt for the sauce
  • 1 to 2 tablespoons water, as needed to thin the sauce

Instructions

  1. Cook the rice: Add the rinsed rice and water or chicken broth to a medium saucepan. Bring to a boil, cover, reduce the heat to low, and cook for 15 to 18 minutes, or until the liquid is absorbed. Remove from the heat and let the rice stand covered for 5 minutes before fluffing with a fork.
  2. Season the chicken: Place the chicken in a bowl. Add 1 tablespoon of olive oil, garlic powder, smoked paprika, oregano, onion powder, salt, and black pepper. Toss until every piece is evenly coated.
  3. Prepare the vegetables: While the rice cooks, halve the tomatoes, dice the cucumber, shred the carrots, slice the avocado and red onion, and chop the parsley.
  4. Make the garlic herb sauce: In a small bowl, stir together the Greek yogurt, mayonnaise, lemon juice, grated garlic, chopped herbs, and salt. Add water one tablespoon at a time until the sauce reaches a drizzleable consistency.
  5. Heat the skillet: Heat the remaining tablespoon of olive oil in a large skillet over medium-high heat.
  6. Cook the chicken: Add the chicken in a single layer. Cook for 6 to 8 minutes, turning occasionally, until golden on the outside and cooked through. The thickest piece should reach 165°F (74°C).
  7. Rest the chicken: Transfer the cooked chicken to a plate and let it rest for 5 minutes so the juices can settle.
  8. Assemble the bowls: Divide the rice among four bowls. Add the chicken, tomatoes, cucumber, carrots, avocado, and red onion in separate sections.
  9. Finish and serve: Drizzle the garlic herb sauce over each bowl, sprinkle with parsley, and serve while the chicken and rice are warm.

Notes

For meal prep, store the hot ingredients, vegetables, avocado, and sauce separately. Assemble just before serving for the best texture.
