Congratulations! You’ve discovered one of the most sought-after fungi on the planet. So, how will you cook it now? I prefer to think of the chicken of the woods mushroom as chicken when I’m cooking. There are a few significant variations between the meat and the mushroom, making it a little more difficult.

Difference number 1:

The mushroom called chicken will continue to absorb and then some more. This mushroom will absorb more fats and oils than you can imagine and sit in your stomach like a lead weight if you drown it in them.

Difference number 2:

Some kind of wetness is required for the mushroom. If you simply throw the mushroom in a skillet and cook it, it won’t have as good of a texture as the chicken. It requires a liquid when cooking to help it become softer. Given how well the chicken mushrooms absorb the liquid, it stands to reason that this beverage would be excellent.

You can thus use your creativity and experiment with this mushroom, but if you’re looking for a quick and simple dish, this is one of my favorites.

Chicken of the Woods in a Garlic-Tomato, Sherry Sauce.


  • half an onion
  • 3 cloves garlic
  • 1/2 cup cooking sherry
  • 1 tablespoon basil leaves
  • salt and pepper to taste
  • 2 cups chicken mushrooms
  •  cups chopped cherry tomatoes
  • 2 tablespoons olive oil or butter

Step 1:

Make sure your chicken of the woods mushrooms are clean. You want to attempt doing this without the use of water since, as I mentioned previously, this mushroom is so incredibly spongy and absorbent. Usually, I just stand over the sink and rub down the mushroom to remove any dirt while using my hands to break off any undesired pieces. I give the mushroom a thorough, old-fashioned rubdown before using my mouth to blow its surface clean. Functions flawlessly.

Step 2:

Dice one onion and three garlic cloves, then sauté them in butter or olive oil over medium heat in a big pan. Cook for a little while till browned. As you work, chop the mushroom into two bite-sized pieces and a mixture of bite-sized pieces.

Step 3:

Add the two cups of chicken mushrooms to the onions and garlic after they have softened. Add a half cup of cooking sherry, put a lid on the pan, and let it boil. Give the mushrooms 20 minutes to cook.

Add the basil, cherry tomatoes, and salt and pepper. Cook, covered, over low heat for a further 20 minutes.

Present and savor. Even by itself, this dish is a delight. However, I usually order it in one of two ways. One method is to mix it with a salad to create a dish that tastes like grilled salad. The second method is to consume the mixture like a sandwich by placing it inside a subbread and topping it with a little cheddar cheese. This second method seems to be my favorite!


One of my favorite uses for wild mushrooms is in chicken-fried chicken of the woods mushrooms. This is my very first recipe for fried chicken of the woods, from the days before I even owned my eatery.
