🧂 Ingredients

  • 24 frozen dumplings (about 1 1/2 pounds / 680g), pork, chicken, or vegetable
  • 2 tablespoons neutral oil, such as canola or vegetable
  • 3 cloves garlic, finely grated
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1/2 cup (120ml) heavy cream
  • 1 teaspoon toasted sesame oil
  • 1 1/2 cups (170g) shredded mozzarella
  • 2 scallions, thinly sliced

📋 Instructions

  1. 1Heat the oven and pan — Preheat the oven to 425°F (220°C) and set a 12-inch oven-safe skillet over medium-high heat with the oil. Let the pan get hot for 2 minutes so the dumplings sear the moment they land.
  2. 2Sear the dumplings — Arrange the frozen dumplings in a single snug layer in the hot skillet and cook undisturbed for 3 minutes, until the bottoms are light golden brown and release easily when nudged with a spatula.
  3. 3Whisk the sauce — In a small bowl, whisk the garlic, soy sauce, honey, rice vinegar, heavy cream, and sesame oil until smooth. Taste and add a pinch of salt only if your soy sauce is low-sodium.
  4. 4Pour and bake — Pour the sauce evenly over the dumplings, tilting the pan so it settles into the gaps. Transfer to the oven and bake at 425°F (220°C) for 20 minutes, until the sauce bubbles at the edges and a dumpling reads 165°F (74°C) in the center.
  5. 5Add the cheese — Scatter the mozzarella over the top and return to the oven for 8 to 10 minutes, until the cheese is melted and golden brown with bubbling edges.
  6. 6Rest and finish — Pull the pan out and let it rest 5 minutes so the sauce thickens. Scatter the scallions over the top and serve straight from the skillet.
👨‍🍳 Chef's Note: If the cheese browns before the dumplings are hot, tent the pan loosely with foil and keep baking; if the sauce looks thin, rest it 5 more minutes off the heat.
