🧂 Ingredients
- 1 1/2 cups (150g) old-fashioned rolled oats
- 3/4 cup (90g) vanilla or unflavored whey protein powder
- 1/2 cup (120g) canned pumpkin puree (not pumpkin pie filling)
- 1/3 cup (85g) creamy almond butter
- 3 tbsp (60g) pure maple syrup
- 1 tsp vanilla extract
- 1 1/2 tsp ground cinnamon
- 1/4 tsp ground ginger
- 1/4 tsp fine sea salt
- 2 tbsp mini chocolate chips or chopped pecans (optional)
📋 Instructions
- 1Toast the oats — Spread the oats on a sheet pan and toast at 350F (175C) for 8 to 10 minutes, until they smell nutty and look faintly golden at the edges. Cool them completely, about 10 minutes, so they do not melt the chocolate chips later.
- 2Whisk the wet base — In a large bowl, stir together the pumpkin, almond butter, maple syrup, and vanilla until glossy and completely smooth, about 45 seconds. This step matters because any nut butter lumps will leave dry pockets in the final dough.
- 3Bloom the spices — Sprinkle the cinnamon, ginger, and salt over the wet mixture and stir for 20 seconds, until you can smell the spice blooming. Mixing spices into the wet base first keeps them from clumping in the protein powder.
- 4Fold in protein and oats — Add the protein powder and cooled oats and fold with a spatula just until no dry streaks remain, about 30 seconds. Stop the second it comes together, because overworking makes the dough tight and crumbly.
- 5Add the crunch — Fold in the mini chocolate chips or pecans with three or four turns. The dough should look like thick, scoopable cookie dough and pull away from the bowl cleanly.
- 6Chill the dough — Cover and refrigerate the dough for 20 minutes, until it is firm enough to scoop without sticking to your fingers. This rest also lets the oats soak up moisture so the balls stay chewy.
- 7Roll the balls — Scoop rounded tablespoons (about 25g each) and roll between slightly damp palms into 18 balls. Press firmly as you roll; a well-packed ball will not crumble when you set it down.
- 8Chill and serve — Arrange the balls on a parchment-lined tray and chill at least 30 minutes before eating. They are ready when they feel firm on the outside and give a soft, chewy resistance when you press one.
👨🍳 Chef's Note: If your protein powder is very bitter, taste the dough before rolling and add an extra teaspoon of maple syrup; sweetness balances bitterness fast.
