🧂 Ingredients

  • 10 medium mandarins or clementines (about 2 lb / 900g), peeled with peels reserved
  • 3 tbsp (63g) honey
  • 2 tbsp (30ml) fresh orange juice
  • 1 tbsp (14g) unsalted butter, melted
  • 1/2 tsp (2g) ground cinnamon
  • 1/4 tsp (1g) fine sea salt
  • 1/4 cup (30g) dark chocolate chips, for eyes and mouths
  • 1 tbsp (8g) powdered sugar, for dusting

📋 Instructions

  1. 1Heat the Oven — Preheat your oven to 350°F (175°C) and line a rimmed baking sheet with a silicone mat or parchment. The low, steady heat sets the glaze without drying out the fruit.
  2. 2Whisk the Glaze — In a small bowl, whisk the honey, orange juice, melted butter, cinnamon, and salt until smooth and glossy. It should smell sweet and warm, like spiced orange tea.
  3. 3Peel the Mandarins — Peel all ten mandarins, removing as much of the white pith as you can without tearing the segments. Keep the peels aside if you want to candy them later.
  4. 4Carve the Faces — Use a paring knife to cut two small triangle eyes and a wide grinning mouth into each mandarin, going no deeper than 1/8 inch. Work slowly; the fruit gives way with a soft pop when the blade is through.
  5. 5Brush With Glaze — Arrange the mandarins on the baking sheet and brush each one generously with glaze, letting it pool slightly in the carved openings. Reserve the remaining glaze for a second coat.
  6. 6Bake Until Glossy — Bake for 12 to 15 minutes, until the glaze bubbles at the edges and the fruit looks shiny and slightly translucent. You'll smell caramelized honey the moment they're ready.
  7. 7Glaze Again — Pull the sheet out and brush the mandarins with the reserved glaze while hot. The second coat is what gives them that lacquered, candy-apple shine.
  8. 8Add Chocolate Faces — Melt the chocolate chips in 20-second microwave bursts, stirring between each, until smooth. Use a toothpick to dot chocolate into the carved eyes and mouths, then let set for 10 minutes.
  9. 9Dust and Serve — Dust lightly with powdered sugar for a frosty look and arrange on a platter. Serve within 2 hours for the glossiest finish.
👨‍🍳 Chef's Note: If your mandarins are very juicy, pat them dry before glazing so the honey clings instead of sliding off.
