This is a sheet pan dinner built on high heat and short timing. Chicken thigh strips, peppers and onion go onto one pan at 220°C (425°F) for 20 minutes. The result is browned chicken with softened, blistered vegetables.
The marinade is lime, oil, cumin and smoked paprika. It does two jobs: it seasons the meat and it helps the vegetables caramelize rather than steam. Weigh the spices; volume measures of ground cumin vary by nearly a third.
Slice everything the same thickness. Even strips cook evenly, and uneven strips give you dry chicken next to raw pepper. Weigh, watch, repeat.
Thighs stay juicy at high heat. Chicken breast works but cut it thinner, 0.5 cm, so it finishes in the same time.
Use red and yellow for sweetness. Frozen pepper strips work, but pat them dry or they will steam.
Yellow onion softens fastest. Red onion holds more bite and colors the pan pink.
Avocado or canola oil tolerates 220°C. Do not use extra virgin olive oil here; it smokes below that temperature.
Bottled lime juice is fine in a pinch. Add the zest of half a lime for more aroma.
Whole cumin seeds toasted and ground taste stronger. Use 1 1/2 tsp if your jar is fresh.
Sweet paprika is a substitute but loses the smoke. Add 1/4 tsp chipotle powder for heat.
Kosher salt is coarser; use 2 tsp. Salt the chicken first so it seasons through.
Fresh garlic burns at 220°C. Powder distributes evenly and does not scorch.
Freshly ground. Pre-ground pepper is weaker; use 3/4 tsp.
Corn tortillas work for gluten-free. Warm them wrapped in foil for the last 5 minutes.
pat peppers and onion dry before tossing (wet vegetables steam instead of char).
use two pans if the pile is deeper than 3 cm (wet, gray chicken means trapped steam).
1 cm thickness for both chicken and peppers (uneven strips cook at different rates).
3 minutes off the heat lets juices settle (cutting immediately loses them to the pan).
Set the oven to 220°C (425°F) and place a rack in the upper third. Put an empty sheet pan in for 10 minutes (a hot pan browns the chicken on contact).
Toss 900 g chicken strips with 1 tsp of the salt in a bowl. Let stand 10 minutes while you cut the vegetables (brief salting seasons the meat and pulls surface moisture).
Cut 400 g peppers and 250 g onion into 1 cm strips. Pat them dry with paper towels (dry surfaces brown; wet surfaces steam).
Stir 3 tbsp oil, 2 tbsp lime juice, 2 tsp cumin, 2 tsp paprika, 1 tsp garlic powder, 1/2 tsp pepper and the remaining 1/2 tsp salt in a large bowl (mixing the spices into oil spreads them evenly).
Add the chicken, peppers and onion to the spice oil. Toss until every strip is coated and no dry spice remains (about 1 minute).
Spread the mixture on the preheated pan in a single layer, no deeper than 3 cm (a single layer roasts; a pile steams). Use two pans if needed.
Roast at 220°C (425°F) for 20 minutes. The chicken is done at 74°C (165°F) internal and the pepper edges are browned and bubbling (check the thickest strip with a thermometer).
Switch to broil for 2 minutes to char the tops. Pull the pan and rest 3 minutes (juices redistribute; the pan is very hot).
Wrap 12 tortillas in foil and warm in the oven for 5 minutes. Fill with the chicken mixture and serve with lime wedges (warm tortillas fold without cracking).
swap in 700 g large shrimp and roast only 8 minutes at 220°C (425°F).
use 800 g flank steak strips and roast 12 minutes for medium.
use 500 g portobello strips and 400 g chickpeas, roast 22 minutes.
Store in a sealed container up to 3 days. Keep the tortillas separate.
Freeze the filling only, up to 2 months, in 250 g portions. Thaw overnight in the refrigerator.
Reheat at 180°C (350°F) for 8 minutes on a sheet pan, or 2 minutes in a hot skillet. Microwave works but softens the peppers.
Yes, but cut breast strips to 0.5 cm so they finish in 20 minutes without drying. Check the internal temperature at 74°C (165°F) and pull the pan early if needed.
The pan was crowded or the vegetables were wet. Spread the mixture in a single layer on a preheated pan and pat the peppers dry first.
Use an instant-read thermometer: 74°C (165°F) at the thickest point. Without one, cut a strip; the center should be opaque white, not pink.
Yes, toss everything in the marinade up to 8 hours ahead and refrigerate. Add the vegetables just before roasting so they do not soften in the lime juice.
No, smoked paprika and cumin are mild. For heat, add 1/4 tsp cayenne to the spice oil or serve sliced jalapeños on the side.
Heat the pan first, cut even strips, and trust the thermometer. Weigh, watch, repeat.
